Shiitake Bacon

Roasted Shiitake

This is a delicious, easy garnish for soups and salads.

Serves 4

¼ lb Shiitake mushrooms
4 tablespoons olive oil
½ teaspoon sea salt

  1. Preheat oven to 375*.
  2. Using paper towels or a kitchen towel, clean mushrooms (do not wash). Cut off the stems. Slice mushrooms caps into very thin slices.
  3. Place mushrooms in a bowl, and add oil and salt. Mix well.
  4. Place sliced mushrooms in a baking sheet, spreading them into a single layer.
  5. Bake them until brown, about 15 minutes. Be careful not to brown them too much, as they will become bitter and will have a burned taste.
