Shiitake Bacon
/This is a delicious, easy garnish for soups and salads.
Serves 4
¼ lb Shiitake mushrooms
4 tablespoons olive oil
½ teaspoon sea salt
- Preheat oven to 375*.
- Using paper towels or a kitchen towel, clean mushrooms (do not wash). Cut off the stems. Slice mushrooms caps into very thin slices.
- Place mushrooms in a bowl, and add oil and salt. Mix well.
- Place sliced mushrooms in a baking sheet, spreading them into a single layer.
- Bake them until brown, about 15 minutes. Be careful not to brown them too much, as they will become bitter and will have a burned taste.
