Poached Eggs
/Serves 1
These are simple, nutritious and delicious.
4 oz (about a handful) of baby spinach, washed and drained
1 tablespoon of olive oil
2 eggs
Pinch of granulated garlic
Salt and pepper
Preparation
- In a frying pan, heat the olive oil over a medium heat. Add spinach, sprinkle with the garlic powder, and sauté for a few minutes until the spinach starts to wilt. Sprinkle with salt and pepper. Break eggs into the center of the spinach, add with a pinch of salt, cover pan, lower heat, and cook until the egg yolks become opaque, about 2-3 minutes.
