Homemade Granola
/Yields about 30 servings (1/4 cup each)
Oats are highly recommended because they are high in fiber content, which helps eliminate mucus and carry toxins out of the body. Oats give stamina and warmth to the body, and they soothe the nervous and digestive systems. Make oats one of your staple foods.
5 cups of rolled oats (not instant or quick cooking)
1 cup of raw nuts (pecans, walnuts or almonds), chopped
½ cup raw pumpkin seeds
½ cup unsweetened coconut flakes
1 teaspoon ground cinnamon
pinch salt
½ cup just fruit spread (such as apricot, strawberry, sour cherry)
¼ cup maple syrup, sucanat or turbinado sugar
2 tablespoon of coconut oil or another neutral oil, such as canola
- Pre-heat oven to 300 degrees F.
- Spread the oats on a baking sheet and roast for 10 minutes, stir after 5 minutes.
- While the oats are roasting, in a medium bowl, combine the nuts, coconut flakes, cinnamon and salt. Set aside.
- In a small pot, combine fruit spread, maple syrup/sucanat/turninado sugar with oil. Heat over medium heat just to melt/blend flavors about 2-3 minutes. Pour over the nut mixture.
- Once oats are out of the oven, add them to the nut mixture. Stir till well combined. Mixture will be sticky.
- Spread the mixture on 2 baking sheets and bake for 20 minutes. Stir after 10 minutes so that it bakes and browns evenly.
- Let granola cool completely.
- Transfer to a sealed container and store in a cool place or in the refrigerator.
Serve with a dollop of yogurt and seasonal fresh fruit. Can be served for breakfast or as a snack.
